Corn Salsa
From the Kitchen of:
Pepper

1 cup corn kernels
1 tomato, chopped
1 jalapeno pepper, finely chopped
1 Tbsp. finely chopped red onion
1 Tbsp. snipped cilantro or parsley
1 Tbsp. lemon or lime juice
1 Tbsp. olive oil
1 clove garlic, minced
Combine all ingredients in medium bowl and mix. Cover and chill 1-2 hours to blend flavors.
